These refreshing, simple desserts are perfect after a dinner party or any get-together to treat guests to a little something sweet. Color them according to any occasion – we picked a mint green for upcoming Easter, or you could do pastel pinks, yellow or blues. Darken or mix colors for other events; these mints are perfect for any occasion!
4 oz Always Save cream cheese, softened
4 ½ cups Always Save powdered sugar, divided
½ teaspoon mint extract
A few drops of food coloring (we used three in this example)
1 cup heavy whipping cream
10 oz Always Save chocolate-flavored chips
In a large bowl, mix together (with a stand or hand mixer) cream cheese and one cup of powdered sugar.
Add in mint extract and food coloring; mix until combined.
By cups, add in the rest of the powdered sugar and mix until well combined. You may have to use your hands at this point because mint dough gets stiff and sticky.
Once mixture is completely combined, place teaspoon-sized dough balls on a large baking sheet that is lined with parchment paper.
Use the end of a wooden spatula to create round indentions into each dough ball.
Place mint bites in the fridge for one hour to chill.
While mint bites are chilling, make chocolate ganache by placing chocolate chips in a dinner bowl. Heat whipping cream in the microwave for about 1-2 minutes, until just boiling; then remove and pour over chocolate chips.
Stir a few times and let rest for 2 minutes. Then, continue stirring until chocolate is melted and ganache is smooth. Transfer mixture into a zipper plastic bag and let set on a counter for at least 30 minutes. This will allow the ganache to thicken to a creamy consistency.
Once mints have cooled and ganache is ready, cut the corner of the plastic bag to create a piping bag.
Fill each mint indention with chocolate. Chill completed mint bites for another hour. Store leftovers in the fridge.
