Nothing says dinner like a savory bowl of chili. This five-ingredient chili is simple to create for your family during Family Meals Month or all fall long.
1 Onion, diced
1 can of Always Save Black Beans
3 medium Sweet Potato, diced into bite-size pieces, peeled
4 cups of Always Save Chicken Broth
1 jar of Always Save Mild Taco Sauce
Optional: Best Choice Chili Seasoning Package
Toppings: Cilantro and avocado
In a large pot over medium heat, saute onions in 1 Tbsp oil and season with a healthy pinch each salt and pepper. Stir and continue cooking on medium heat until translucent and soft.
Add sweet potato and chili seasoning (if using). Cook for 3 minutes. Then add salsa, and vegetable stock.
Bring mixture to a low boil on medium-high heat and then lower heat to medium-low and simmer. Add black beans, cover and cook for at least 30 minutes more, until the sweet potatoes are fork-tender and the soup and thickened. This soup taste even better as leftovers. Top with your favorite toppings.
