April 30 is National Oatmeal Cookie Day! Try these three takes that upgrade traditional cookie recipes.
Chocolate Chip Oatmeal Cookies
Ingredients
½ cup Best Choice Shortening
1 cup Best Choice White Sugar
2 Best Choice Eggs
2 ¾ – 3 cups Best Choice Quick Oats
1 tsp. Best Choice Baking Soda
Pinch of Best Choice salt
½ cup Best Choice Unsalted Butter
1 cup Best Choice Brwon Sugar
1 tsp. Best Choice Vanilla
1 ½ cups Best Choice White Flour
2 cups Best Choice Chocolate Chips
Directions
Cream shortening and butter. Beat in sugars, egg, and vanilla. Sift together flour, soda, and salt. Add to creamed mixture. Stir in quick oats and chips.
Drop onto cookie sheet. Bake for 12-15 minutes at 350 degrees. Don’t ove-bake!

Apple Oatmeal Cookies
Ingredients
1 cup all-purpose flour
1 tsp cinnamon
¼ tsp nutmeg
½ tsp baking soda
½ cup butter, softened
½ cup light brown sugar
¼ cup granulated sugar
1 egg
1 tsp vanilla
1 and ¾ cups old-fashioned oats
1 apple
Directions
Peel, core and chop apple into small pieces; set aside. In a large bowl, add flour, cinnamon, nutmeg and baking soda. Stir together and set aside.
In a separate bowl, beat butter and both sugars together until smooth. Then add in the egg and vanilla; mix well. Add dry ingredients to the wet ingredients and slowly mix to combine. Mix in oats and apple, and then cover and refrigerate dough.
While dough is cooling, preheat oven to 350 degrees. After 30 minutes, remove dough from the fridge and scoop spoonfulls onto baking sheets lined with parchment paper. Bake for 12-14 minutes. Let cool before serving.

Cranberry Walnut Oatmeal Cookies
Copy the recipe above, but replace the apple with 1/3 cup walnuts and 1/3 cup dried cranberries. Press additional walnuts and cranberries on top of each cookies before baking.
