Berry Banana Baked Oatmeal

Breakfast just got fruitier! This baked oatmeal recipe is too easy to make and perfect to store for seconds another time. Thanks to Best Choice for teaming up with us for this delicious recipe.



4 cups oats

1 ½ tsp cinnamon

1 tsp baking powder

½ tsp salt

1 ½ cups milk (your preference, but we used 2%)

¼ cup brown sugar

2 tsp vanilla

1/3 cup maple syrup

1 tsp lemon juice

3 ripe bananas, mashed

½ cup peanut butter (we used creamy)

1 cup mixed berries

½ cup sliced almonds



Preheat oven to 375 degrees. Combine oats, cinnamon, baking powder and salt in a medium-sized bowl.

In a larger separate bowl, mix together milk, sugar, vanilla, maple syrup and lemon juice. Add in mashed banana and peanut butter. Mix with an electric mixer until all ingredients are well combined.

Add dry mixture in medium bowl to wet mixture and stir thoroughly. Pour completed mixture into a greased 9”x13” baking dish; spread evenly throughout the dish. Bake around 18 minutes then remove. Add berries on top and bake for additional 5 minutes or until set. Sprinkle almonds on top and serve hot. Stores for up to a week in the refrigerator.
