Creamy Sandwich Cookies & White Chocolate Ginger Snaps

Last week, we hosted our Spring is Sweet Cookie Giveaway. We have a few fun ways to make your cookies even sweeter. Check out our recipes below.

Creamy Sandwich Cookies
We used both iced oatmeal and chocolate chip cookies to make these creamy sandwich cookies. Simply, make the homemade cream cheese frosting from the recipe below, then spread it on the inside of a cookie. Once you have your desired amount of frosting, place the second cookie on the frosting to create your sandwich. Stick your completed sandwiches in the refrigerator for half an hour to harden a bit before eating.
Classic Homemade Cream Cheese Frosting:
4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
In a large bowl, beat butter and cream cheese together. Add in powdered sugar on cup at a time and beat on a low speed until smooth. Finally, mix in vanilla extract.






White Chocolate Ginger Snaps
Our boxed ginger snaps have some zing! Add some extra sweetness by dipping half the cookie in melted white chocolate. This combination is amazing and addictive (you’ve been warned). To create these, simply melt white chocolate almond bark by following the directions on the pack. Once melted, dip the ends of your ginger snaps in the chocolate and set to dry on wax paper. After 15-20 minutes, your new cookies will be ready to enjoy.
