Taco Mac Dinner

In just one pan, this dish combines our love for #TacoTuesday and Mac ‘n Cheese. Introducing the amazing Taco Mac Dinner!

Taco Mac Dinner

1 tbsp Best Choice Olive Oil
1 lb ground meat (beef, venison, turkey – your preference. We used venison in the photos below)
1 white onion, small and diced
1 tbsp minced garlic
2 tbsp taco seasoning
2 ½ cups dry Always Save Elbow Macaroni
1 cup water
2 cups Best Choice Beef Broth
2 cups Always Save Cheddamelt
1 pint cherry tomatoes
1 can Always Save Black Olives
Green onions

In a large pot, add olive oil and diced white onion; cook over medium-high heat for about two minutes. Stir in garlic. Then add ground meat and 1 tbsp of taco season. Cook meat until beef is no longer pink. Drain if necessary.

Add water, broth, macaroni, tomatoes and another tbsp. of taco seasoning to the same pot. Cover and cook for 15 minutes over low heat, stirring occasionally. Then, increase heat to medium, uncover pan and stir pasta until the liquid is almost all gone.

Remove pan from heat and stir in cheddar melt until completely melted. Garnish with diced green onions, black olives and additional tomatoes if desired. Serves up to six.
