Tator tots just got tastier! Give them a taco twist with the recipe below.
1 (32oz) bag of Best Choice Tator Puffs Frozen Potatoes
1 (16oz) can Always Save Refried Beans
1 ½ cups Always Save Shredded Cheese (your flavor choice)
1 (15.25oz) can Always Save Whole Kernel Corn
1 (5.75 oz) can Always Save Ripe Black Olives
1 cup Always Save Salsa
Always Save Sour Cream (optional)
Best Choice Taco Seasoning (optional)
Preheat oven to 450 degrees. Line baking pan with parchment paper. Spread potatoes in an even, single layer on paper-lined pan. Then bake potatoes according to directions on package, but pulling potatoes out of the oven about 3 minutes early.
While potatoes cook heat up refried beans on stove over low heat. Add taco seasoning to beans if you wish for added taco flavor.
Before potatoes are completely finished baking, pull them out of the oven. Top with dollops of beans, then sprinkle with cheese and finally corn. Replace the pan in the oven and bake for about three more minutes or until cheese is melted.
Remove from oven and spoon onto plates. Top each with lettuce, olives, salsa, and sour cream, or any combination of toppings.
