Apple Pie Muffins

Ingredients

2 ¼ cups Always Save All Purpose Flour

1 tsp Always Save Baking Soda

1 egg

1 cup buttermilk

½ cup Always Save Salted Butter, melted

1 tsp Always Save Imitation Vanilla Extract

1 ½ cups packed Always Save Brown Sugar

2 cups diced Always Save Apples

½ cup packed Always Save Brown Sugar

⅓ cup Always Save All Purpose Flour

1 teaspoon ground cinnamon

2 tbsp Always Save Salted Butter, melted

DIRECTIONS

Preheat the oven to 375°F.

Line a 12-cup muffin tin with paper muffin cups.

In a large bowl, stir together the flour, baking soda, and salt.

Mix the egg, buttermilk, melted butter, vanilla, and brown sugar in a medium bowl until the sugar dissolves.

Pour the wet ingredients into the flour mixture and stir until everything is just blended.

Fold in the diced apples, but do not over-mix.

Spoon the muffin mixture into the prepared muffin tin, filling the cups to the top.

 

Make the Topping

In a small bowl, stir together the brown sugar, flour, and cinnamon.

Drizzle in the melted butter while tossing the dry ingredients with a fork until well blended.
