Cheesy Corn Spoon Bread


1/4 cup Always Save Butter, cubed

1/2 medium onion, chopped

2 large eggs

2 cups Always Save Sour Cream

1 can Always Save Whole Kernel Corn, drained

1 can Always Save Cream Style Corn

1/4 tsp Always Save Salt

1/4 tsp Always Save Pepper

1 pkg Always Save Cornbread Muffin Mix

2 medium jalapeno peppers, seeded & chopped

2 cups Always Save Shredded Cheddar Cheese, divided

Preheat the oven to 375°F.

In a large skillet, heat the butter over medium-high heat.

Add the onion and sauté until tender. Set aside for later.

In a large bowl beat eggs, sour cream, both cans of corn, salt, and pepper together until well mixed.

Stir in the cornbread mix just until blended.

Fold in the jalapeno peppers, sauteed onion, and 1 & 1/2 cups cheese.

Transfer the mixture to a greased 9 x 13 baking dish.

Sprinkle remaining cheese over the mixture.

Bake until a toothpick inserted in center comes out clean, 35-40 minutes; cool slightly.
