This Southwestern staple is easy to whip up on a weeknight! It’s full of flavor and crunch.
Directions:
Preheat oven to 350 degrees.
Cook beef and ¼ cup onion in large skillet. Stir in the taco seasoning when beef is almost completely cooked through. Drain and set aside.
Spray baking dish (we used a round, 2-quart casserole dish, but you can also use an 8×8 pan) with cooking spray. Lay two cups of the corn chips on the bottom of your baking dish. Layer beans on top of chips. Then put the beef mixture on top of beans. Sprinkle cheese on top of beef.
Bake 15-20 minutes, or until cheese is melted. Remove from oven and top with remaining 1 cup of corn chips.
Mix remaining onion, tomato and cilantro together; sprinkle on top of pie. Serve with a dollop of sour cream, salsa or guacamole.
