DIRECTIONS
Combine the flour, ginger, cinnamon, baking soda, nutmeg, and salt in a large mixing bowl.
In another large bowl, beat the butter and brown sugar with an electric mixer on medium speed until the mixture is light and fluffy. Then, add in the molasses, egg, and vanilla and mix well.
Gradually add the flour mixture into the second large bowl on low speed until all ingredients are well combined.
Roll out about 2 feet of plastic wrap and lay the dough in the middle. Then, press the dough into a thick, flat disk. Wrap the dough tightly in the plastic wrap and refrigerate it for 4 hours or overnight.
Once the dough is ready, preheat the oven to 350°F (175°C).
Roll the dough on a lightly floured surface to a 1/4-inch thickness.
Using a 5-inch cookie cutter, cut the dough into gingerbread man shapes. Place the gingerbread men 1-inch apart on ungreased baking sheets.
Bake the gingerbread men for 8-10 minutes, or until the edges of the cookies are set and just begin to brown.
Allow the cookie to cool on baking sheets for 1-2 minutes, then move them to a wire rack to cool completely.
Decorate the cooled cookies as desired.
