DIRECTIONS
Line a 12-cup muffin tin with paper liners.
Place one chocolate sandwich cookie in each of the liners.
Place the remaining 12 chocolate sandwich cookies in a large sealable bag and crush them with a rolling pin. Set them aside for later.
In the large mixing bowl, beat the cream cheese with a handheld mixer on medium until smooth, about 2 minutes.
Add in the sugar, sour cream, vanilla, and salt. Beat until smooth and creamy, about 2 more minutes. Set aside to use shortly.
In a medium mixing bowl, whisk the heavy cream until stiff peaks form.
Add the whipped cream to the cream cheese mixture and gently fold with a spatula until both are well combined.
Add one cup of the crushed Oreos and fold until combined.
Spoon the cream cheese mixture into each muffin liner, about 1/4 cup each, and smooth out the top.
Sprinkle the remaining crushed chocolate sandwich cookies over the top of the bites.
Chill the cheesecake bites until firm and set, at least 6 hours or up to 2 days.
