Sheet Pan Chicken Quesadillas

Ingredients

10-12 flour tortillas, 10 inch

Always Save pan spray

2 Tablespoons olive oil

1 yellow onion, chopped

1 pound lean ground beef or chicken

1 cup red pepper, chopped

3 Tablespoons taco seasoning

1/4 cup water

1 can (15oz) black beans drained and rinsed

1 can (16oz) sweet corn, drained

2 cups Always Save shredded cheddar cheese

2 Tablespoons butter, melted

Directions: 

Preheat oven to 400 degrees. Generously spray a 13×9 sheet pan with Always Save cooking spray. Cover the baking sheet with flour tortillas. Arrange two tortillas in the middle of the pan, place them overlapping the perimeter so some overhang the rim. Set pan aside.

In a large skillet, add olive oil, chopped onion, and ground beef or chicken. Cook for 8 min on medium-high temperature, stirring occasionally. Place chopped peppers into the skillet and continue cooking for 8-10 minutes or until meat is browned and cooked through. Add taco seasoning and water, simmer contents for 5-8 minutes. Stir in beans and corn to blend flavors. Remove pan from the heat.

Place half the Always Save shredded cheese on the flour tortillas. Spread the ground beef and vegetable mixture evenly over the tortillas and cheese. Top with remaining cheese, add more if desired. Place two tortillas overlapping in the middle of the pan, then fold the overhanging tortillas back towards the center under the two tortillas. Brush the top of the tortillas with melted butter. Then place a smaller pan on top to keep the contents contained and the tortillas folded. Bake on the middle rack for 20 mins or until edges are golden brown. Remove from oven. Let cool 10 minutes before cutting and serving.
